Baked Polenta

Polenta. It’s new to us. Is it new to you, too?

I have walked through the grocery store and picked it up several times. But, we are a family who shops at grocery stores as little as possible and we stay on the outside perimeter of the store. Processed food of any kind has a hard time finding it’s way into our home. Except for some sauces and an occassional soda (ok, and my cofee cream), we buy very few items that are pre-made/processed.

Last week, I saw the Polenta in the organic aisle and decided – to try it.

Overall, my family liked it. And, I’ll admit-the one child I thought would detest it-LOVED IT. This is the picky child who has an aversion to food based on it’s texture. I was shocked! This child, the one who won’t eat tomatoes – asked for more and even cleared the plate of a sibling who didn’t like it.

While I can’t guarantee everyone in your home will like it, I can say this – it’s something you can add to your menu as an alternative to your rice, pasta or potatoes.

Directions

This is how I made it.

  • My daughter sliced 12 small pieces and placed them in a glass dish
  • Placed about a tbsp of Pasta sauce on each one
  • Baked at 350 for 25 minutes
  • Sprinked with Parmesan Cheese
  • Served as a side dish.

There are tons of other recipes. I could not find one I wanted to try, so I just made it the way I thought my family would enjoy it.

I always try adding something new to our menu.

    How funny you tried polenta this week, because we did at our house too! I had a recipe that called for salt, pepper and grated Parmesan cheese. I just sliced em up and sauteed with butter and above ingredients. It was pretty tasty. But your mini pizzas sound amazing! I will have to try with the rest of my polenta :) thanks!!

  2. Hey friend! I almost picked some up at the grocery store yesterday. But I wasn’t sure how I was going to fix it. Now I know. My son loves spaghetti sauce. So this would be great. Well, I think it would be great. Whether or not he’ll think it would be great is another story ;)
